Central Jersey’s most anticipated restaurant is now open in Metuchen.

Ram & Rooster, the state’s only prix fixe Chinese restaurant, is taking reservations at 83 Central Ave. Owned by Sean Yan, the former pastry chef at the renowned Old Bridge eatery Heirloom Kitchen, Ram & Rooster honors the heritage of Piscataway residents through Western interpretations of Chinese flavors.

Named after his parents’ Chinese zodiac signs, the restaurant offers just an eight-course prix fixe menu for $128, with dishes like corn wonton in black tea, roasted duck with blackberry hoisin and white asparagus ice cream.

Food will be served in a cozy, dark gray dining room, cozy with walnut, pendant lights and gold accents. Just 28 seats will fill two floors, including an eight-seat chef’s counter overlooking the kitchen.

“This restaurant has been a long time coming,” said Yan, who worked at Heirloom Kitchen for nearly a decade before deciding to open his own place. “I can’t wait to finally show what Ram & Rooster has to offer the New Jersey restaurant scene.”
